Smash Burger

SMASHBURGER!

It stays undefeated in the burger world with my recipe. It’s my go to burger, it’s what I make for my kids, it was on my previous restaurant’s menu and you just can’t beat it.

I love using ground wagyu beef because of the flavor and fat content, which helps make that signature smashburger crust.

The wagyu beef may be the star of the show here but what takes this recipe to the next level are the deeeeeeeeply caramelized onions and the addition of Momofuku soy sauce and the whiskey barrel aged fish sauce.

Trust me, you’ll be making this smashburger all summer long!

Burger patties:

  • 1.5 pounds ground wagyu beef

  • 1 tbsp avocado oil or beef tallow

  • salt to season

  1. preheat your lodge cast iron pan to high heat

  2. portion your ground beef into 3.5 oz balls

  3. when your cast iron is preheated, add 2-3 balls at a time, season with salt and press down to create the smashburger, season lightly with salt again and top with caramelized onions and American cheese (recipe to follow for onions)

  4. once the cheese is melted, double stack your burgers and let them rest before putting them onto your toasted buns

Caramelized onions:

  • 2 onions, peeled and small diced

  • 1.5 tbsp butter

  • salt to season

  • 2 bay leaves

  • 1 tbsp momofuku soy sauce

  • 2 tsp whiskey barrel aged fish sauce

  • 1 tsp ground black pepper

  1. in a small pot, set over medium high heat, add your butter, onions and bay leaves

  2. stir to combine then let sit until the bottom layer of onions start to caramelize, then salt the onions and turn the heat down to medium

  3. stir the bottom of the pot so the onions do not burn

  4. continue to cook over medium heat, while scraping, for 30 minutes, then add your soy sauce and fish sauce and cook for an additional 2-3 minutes

  5. remove from the heat and they will top the burger patties after you flip them

Burger sauce:

  • 1.5 cups mayonnaise

  • 2 tbsp ketchup

  • 1.5 tbsp yellow mustard

  • 1.5 tbsp gochujang

  • 2 tbsp chopped pickles (NOT SWEET!)

  • salt to taste

  • 1/2 tsp ground black pepper

  • 1 tsp soy sauce

  • 1/2 tsp fish sauce

  1. add all ingredients to a large bowl and whisk to combine. keep cold until serving

Burger Buns:

  • I prefer brioche or a sesame seed bun, but you can use whatever burger bun you like!

  • toast in a pan with a little butter until golden brown and serve up your smashburgers!
