Gainful Green Pancakes

Green Pancakes? And they’re healthy? You bet! But how do they taste? Try out the recipe and see for yourself!

Gainful has sent us some really delicious tasting greens powder and we are super excited to share this recipe with you.

Using 100% whole wheat Einkhorn flour from Jovial foods, coconut sugar from Big Tree Farms Bali, the best eggs you can get from Happy Egg Co and of course Gainful’s tropical pineapple greens powder, these superfood pancakes won’t weigh you down or have you feeling like you want to take a nap after breakfast.

I am extremely health conscious and need to know everything that goes into my body and everything from Gainful checks all the right boxes for me. I have been taking one packet of their greens powder everyday since we got our shipment and I am feeling incredible. Gainful has everything from personalized protein powders, which is definitely next on my list to try, to their amazing greens powders which you can find all of that now at your local Target!

Gainful Greens Pancakes!

  • 1.5 cups 100% Einkhorn whole wheat flour from Jovial foods

  • 2 packets Gainful’s tropical pineapple greens powder

  • 3 tbsp coconut sugar from Big Tree Farms Bali

  • 1 tbsp baking powder

  • 1 tsp salt

  • 1 2/3 cup unsweetened almond milk (or whole milk)

  • 3 tbsp avocado oil

  • 2 eggs, separated

  1. in a large bowl, add the flour, sugar, salt and baking powder and whisk to combine

  2. in another smaller bowl, whisk together your milk, avocado oil and egg yolks

  3. in yet another bowl, add your egg whites and whisk vigorously until your egg whites achieve stiff peaks.

  4. first, slowly and gently whisk in your milk mixture into your dry ingredients

  5. then, fold in your egg whites a third at a time, being very gentle at this stage so your pancakes don’t become overworked!

  6. add your pancake mix to your refrigerator for at least 10 minutes

  7. in the meantime, heat a large skillet over medium heat

  8. remove your pancakes from the fridge and cook them in your preheated skillet to what ever size pancakes you prefer. flip them when bubbles appear at the surface, then repeat with the rest of the batter

  9. if you have leftovers, they freeze really well!

Mango, lime and blackberry topping:

  • 2 Haitian mangoes, peeled and diced

  • 2 cups blackberries, cleaned and sliced in half

  • 1 lime, zested and juiced

  • 2 tbsp honey

  • 1/2 tsp salt

  1. in a medium sized bowl, add all of your ingredients and mix together to combine. let sit at room temperature for about 15 minutes before serving to macerate. This will create a delicious syrup!

Coconut and maple sauce

  • 1 cup coconut cream

  • 2 cups maple syrup

  1. in a small bowl, whisk to combine and use as a topping to your pancakes or any breakfast treat!
