Vegan Stuffed French Toast

VEGAN STUFFED FRENCH TOAST

Yes, this recipe is vegan, but you would never know it.

Using Zen pudding, now found at your local Whole Foods, La Boulangerie vegan croissant bread, peanut butter, caramelized bananas, griddled then topped with Zen’s vanilla pudding and maple syrup.

Our friends at Zen have really stepped up the pudding game and its so much different than the pudding you’re used to as a kid. All natural and super clean ingredients, this pudding is unlike any other pudding on the market.

Caramelized bananas:

  • 3-4 bananas, peeled and sliced thin

  • 2 tbsp vegan butter

  • 1/2 tsp salt

  1. in a large saute pan, add your vegan butter and turn the heat to high

  2. add your sliced bananas and toss to combine with the melted vegan butter

  3. let the bananas sit over high heat until they begin to caramelize and turn golden brown, then flip the bananas and continue to caramelize all around, then season with the salt and caramelize until all of the slices are dark golden brown, then remove from the heat

Vegan French Toast Mix:

  • 2 slices of Vegan croissant bread

  • 1 tbsp peanut butter

  • 1 tbsp caramelized bananas

  • 1 tbsp Zen chocolate pudding

  • 2 cups almond milk

  • 1 cup JUST EGG egg mix

  • 2 tbsp coconut sugar

  • 1 tsp salt

  • 2 tbsp vegan butter

  1. separate out your two slices of croissant bread

  2. spread the peanut butter on one side, then the Zen chocolate pudding on the next and top one side with the caramelized bananas then put the two slices together so they are stuffed with the mix

  3. in a large bowl, combine the almond milk, vegan eggs, coconut sugar and salt, then whisk well to combine

  4. add in your stuffed French toast and soak on each side for about 15 seconds

  5. meanwhile, preheat your griddle or nonstick pan over medium heat and melt your vegan butter into the pan

  6. once the butter is melted, add your soaked, stuffed french toast and griddle on each side for about 4-5 minutes to make sure each side is cooked through and gets nice and crispy!

Zen vanilla pudding and maple syrup

  • 2 tbsp zen vanilla pudding

  • 2 cups maple syrup

  1. in a bowl, whisk to combine the pudding and the syrup and use this as your topping for the french toast
