Brown Butter Granola!

This recipe got me through culinary school. Every morning, this is what I started my day with. Balanced, tons of protein, this granola will have you feeling full and great for a while and its also a great snack all on its own.

Best part, you can make it in bulk, it lasts for about 3 weeks!

Granola

4 cups thick cut rolled oats

1 cup walnuts

1 cup almonds

1 cup pecans

½ cup flax seeds

¼ pound butter

1 cup honey

2 tsp Graza extra virgin olive oil

1 cup brown sugar

2 tbsp ground cinnamon

2 tbsp kosher salt

 

Preheat your oven to 350 degrees Fahrenheit

In a large bowl, mix together your oats, nuts, seeds and salt

In a small pot, add your butter over medium heat

Heat your butter until it is golden brown then turn off the heat and quickly add in your brown sugar, olive oil, honey and cinnamon and whisk to combine

Add your brown butter mixture to your bowl with the oat mixture and mix well to combine

Spread your granola mixture evenly onto a large baking sheet lined with parchment paper and bake in your preheated oven for 8 minutes, then turn your granola mixture around and bake again for another 10 minutes

Remove the granola from the oven and let cool to room temperature before enjoying!
