Hamachi Tostada

Hamachi and passioonfruit tostada + passionfruit margarita from Bartesian= the perfect pairing.

Our friends at Bartesian sent us this amazing cocktail machine and it makes it incredibly easy to pair the perfect cocktail with the perfect dish!

I absolutely love passionfruit, not just in desserts but in savory applications as well and it fits in really well here with the citrus cured hamachi and the heat from the habanero chili.

Hamachi loin:

1# Hamachi loin, cleaned

1.5 cups kosher salt

Zest of 2 limes

In a bowl, combine the salt and lime zest

Cover your Hamachi with the lime salt all over and cure in the fridge for 15-20 minutes

Rinse your cured Hamachi under cold water and pat dry. Put back into the fridge again for at least 30 minutes before slicing

 

Passionfruit-habanero salsa

4 large tomatillos, peeled and rinsed

1 habanero

½ white onion, peeled

1 lime, zested and juiced

2 tsp kosher salt

2 tbsp Pitaya Foods frozen passionfruit

Fill a medium sized pot with salted water and bring to a boil

Add your tomatillos, habanero and white onion and boil for 3-4 minutes

Drain the water and add everything to a blender along with the lime zest and juice, salt and frozen passionfruit and blend until smooth

 

Avocado mousse

2 avocadoes, peeled

1 bunch cilantro

2 limes, zest and juice

1 tbsp kosher salt

1 tbsp Graza extra virgin olive oil

Add all of your ingredients to a large container and blend with a stick blender until smooth. This can also be done in a food processor or regular blender

 

Tostadas:

-          2 yellow corn tortillas, thick cut (gruesa)

-          4 cups neutral oil, such as avocado or canola oil

-          Salt to taste

Heat your neutral oil in a pot until it reaches a temperature of 335 degrees Fahrenheit

Fry your corn tortillas until they turn light golden and flip a few times to ensure even frying

Season your tortillas with salt right when you get them out of the fryer
