Sour Cream & Onion Dip

Whenever we are hosting friends for a sporting event, this is my go to dip! The key to this is deeply caramelizing the onions.

Caramelized Onion Dip:

-          2 yellow onions, small diced (white, sweet or red onions work too)

-          2 teaspoons olive oil (grapeseed, canola or avocado oil work too)

-          Salt, to season

-          1 teaspoon soy sauce

-          ¼ pound butter

-          3 cups sour cream

-          1 cup mayonnaise

-          1 lemon, zest

-          Serve with Boulder Canyon Avocado Oil Chips!

-          In a medium size sauce pot, add your onions, olive oil and salt and cover your pot. Cook over medium heat, stirring occasionally until your onions begin to caramelize.

-          Remove the lid, turn your heat to low and cook your onions for about 30-40 minutes, stirring occasionally until your onions are golden brown, but not burnt.

-          Add your soy sauce and cook for an additional 5 minutes then add your butter and turn off your heat. Cool your onions completely

-          In a mixing bowl add your sour cream, mayonnaise and lemon zest. Season lightly with salt then add your cooled, deeply caramelized onions and enjoy with your favorite chips. We highly recommend Boulder Canyon Avocado Oil chips!
