Boneless Chicken Wings

This recipe started when I first worked at a Michelin starred restaurant in San Francisco. I was fresh out of culinary school and these wings blew my mind!

I adapted the recipe from the restaurant into what we do now for @blendcateringreno where we serve them for all different types of weddings and events. Last year, it was on the menu for one of our larger events at @nevadamuseum for over 400 people! We absolutely love them and I hope you do too! Chicken Wings:

-          2 dozen wings, all flats, let uncovered in the fridge overnight, tips removed (SAVE FOR STOCK!!)

-          1 quart rendered duck, chicken or pork fat

-          Salt, to season wings

-          1 star anise

-          4 cloves garlic

-          2 bay leaves

-          1 tsp black peppercorns

 

  1. Add all ingredients to a hotel pan, oven safe pot or pyrex pan.

  2. Preheat your oven to 300 degrees Fahrenheit.

  3. Cover your wings with plastic wrap and then foil very tightly.

  4. Bake in your preheated 300 degree oven for 1 hour, then take your wings out of the oven and let them cool to room temperature in the fat.

  5. When you remove them, drain the excess fat and save your cooking fat in the fridge for next time. This fat saves for up to 2 months in the fridge, or 6 months in the freezer and can be used for confit and sauteing!

  6. When the wings are drained, follow the steps in the video on how to remove the bones.

  7. Discard the pulled bones.

  8. Press your wings lightly with some weight in the fridge for at least 2 hours or overnight.

  9. Preheat your fryer to 375 degrees Fahrenheit.

  10. Fry your wings until golden brown and delicious! You can toss your wings in the sauce, or keep it on the side to dip in the ensure your wings that you worked so hard on, stay super crispy!

 

White truffle hot sauce:

-          1 bottle TRUFF white truffle hot sauce

-          2 teaspoons gochujang

-          2 teaspoons maple syrup

-          ½ pound butter

-          Salt to season

  1. Add all ingredients to a small saucepan and bring to medium high heat. Once the butter is melted, your sauce is ready to go!
