Using the flavors or porchetta, heirloom beans and heritage breed pork chops, this recipe is a weeknight staple for dinner and by using our Meater+ thermometer, you will never have a dry pork chop again.

I first tried porchetta while in culinary school with my wife at a restaurant in New York City, appropriately called, Porchetta. The flavor of the wild fennel pollen was so new and intriguing to me. I knew it had to be on a menu in some sort of way when we started our catering company. So, its on there now and has been since we opened, just in a little different way, using pork belly and a white bean puree.
