JERK CHICKEN WITH GAINFUL’S DAILY GREENS POWDER!

A supergreen, roasted chicken in the style of Jamaican Jerk chicken.

We are so happy to be partnering with Gainful again and bring in a brand new recipe. I have been taking one packet a day of the daily performing greens and I feel incredible. This is an easy and delicious way to incorporate your daily greens powder into your routine!

Chicken:

  • 1 whole chicken, spatchcocked and left in the fridge, uncovered, overnight (this makes the skin super crispy!)

  • 2 tbsp extra virgin olive oil

  • 2 packets Gainful Lemon-Ginger greens powder

  • 4 tsp ground white pepper

  • 2 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp ground ginger

  • 1 tsp ground cinnamon

  • 1 tsp ground allspice

  • 1 tsp ground smoked paprika

  • 1 tsp ground black pepper

  • salt to season

  1. season your chicken with the olive oil and half of all of the other spices. Reserve the other half for your jerk sauce

  2. turn your oven to 400 degrees and add in your seasoned chicken

  3. roast for 30 minutes, then remove from the oven to baste with your jerk sauce (recipe to follow)

  4. add a light layer of your jerk sauce and roast again for another 10 minutes, then repeat and roast for another 5 minutes

  5. remove from the oven, let rest uncovered, for 10-12 minutes before slicing!

Jerk sauce:

  • reserved spices

  • 2 bunches cilantro

  • 8 cloves garlic

  • 1 bunch thyme

  • 2 hanaero chilies

  • 1/2 cup chopped ginger

  • 2 bunches green onions (scallions)

  • 1/2 cup coconut sugar (or brown sugar)

  • 2 tbsp soy sauce

  • 1 cup rice vinegar

  • 2 tbsp avocado oil

  • salt to taste

  1. add everything to a blender and blend on high until very smooth.
